Well-Known UK Chefs to Cook at Food Waste Pop-Up in London

Dan Barber, chef and co-owner of Blue Hill in Manhattan and Blue Hill at Stone Barns in Pocantico Hills, New York, is bringing his wastED food waste pop-up to London February 28 through April 2.

At the event, which will take place on the rooftop of the Selfridges department store, Michelin-starred chefs like Gordon Ramsay, Claire Smyth and Tom Kerridge will serve up meals made entirely of ingredients that would normally be sent to landfill, such as kale ribs, fish heads and bruised produce.

Chef/vegetable whisperer Dan Barber — whose New York destination Blue Hill at Stone Barns simultaneously manages to be the Best Restaurant in America while also pioneering the chefs-saving-the-world movement — is taking his WasteED pop-up to London. And as promised, some major UK culinary stars will join him: Michelin-starred chefs Gordon Ramsay, Claire Smyth, and Tom Kerridge are among the just-announced guest chefs.
