Four Course compost, made from food scraps from the San Francisco Bay area, is applied to the roots of grape vines at Olivet Grange Vineyards in Healdsburg, Calif. Golden Gate Disposal & Recycling Co. and Sunset Scavenger Co. collect food scraps and other compostable materials from restaurants and residences in San Francisco and Oakland. Dixon, Calif.-based Jepson Prairie Organics processes the materials to make the compost. All three companies are subsidiaries of San Francisco-based Norcal Waste Systems. The composting program has drawn interest from the United Kingdom, South Korea, Taiwan, Canada and several large cities in the United States, according to Norcal.
